I took Melissa, the Cooking Diva up on her Recipe Swap Challenge. My entry will not come close to the wonderfully extravagant recipes that I am sure will show up on the Photo/Recipe Swap but it sure hit the spot for our family today!
This New Year's Day we got up late, ate breakfast late and were not so hungry for a huge meal. We also had a house guest who was a bit under the weather. It was also a very, very cold and blustery day. The solution - Matzo Ball Soup. We make this recipe quite often in our house whenever someone is sick or when we want a quick, warm and hearty meal. Enjoy!
Matzo Ball Soup
Matzo Balls: (Manischewitz Recipe)
2 Tbs. vegetable oil
2 large eggs
1/2 cup Matzo Meal
1 tsp. salt
2 Tbs. soup stock
Blend all ingredients togetherand mix until uniform. Cover and place in refrigerator for 15 minutes. After refrigeration form into 1 inch in diameter balls and drop into boiling soup.
Soup Directions:
1 Rotisserie Chicken
1 large can of chicken broth
Water
cliced or grated carrots
Sliced or diced Celery
Matzo Balls
Pour chicken broth into a large pot. Fill up the can with water and add to chicken broth. Feel free to add more broth or water if you want more liquid in your soup. Take the meat off of the bones of the rotisserie chicken and either cut it up in smaller pieces with your fingers or a knife. Add the chicken to the pot. Add carrots and celery to the pot – as much as you like. Bring to a boil and add the matzo balls. After the matzo balls have been added reduce heat to a medium heat. Cover the pot and cook for 30 minutes. Add pepper or salt to your liking.

Do you have a good recipe for matzo brei? My mom doesn't use a recipe.
