The girls baked Thunder Cake and Chango Bars. Check Sabi's blog out HERE for story details. Both recipes turned out to be quite delicious. I will leave them below for you to enjoy.
Preheat oven to 350 degrees.
Cream together one at a time:
1 cup shortening 1 3/4 cup sugar
1 teaspoon vanilla 3 eggs, separated
(Blend yolks in. Beat whites until they are stiff, then fold in.)
Add:
1 cup cold water 1/3 cup pureed tomatoes
Sift together:
2 1/2 cups cake flour 1/2 cup dry cocoa
1 1/2 teaspoons baking soda 1 teaspoon salt
Mix dry mixture into creamy mixture.
Bake in two greased and floured 8 1/2 round pans at 350 degrees for 35 to 40 minutes. Frost with chocolate butter frosting. Top with strawberries.
Chango Bars:
Ingredients:
1/2 cup butter 1/2 cup margarine
2 cups brown sugar 3 eggs
2 1/3 cups flour 1 tablespoon baking powder
1 teaspoon salt 1 cup chocolate chips
1 cup mixed nuts
Directions:
Melt butter and margarine. While this is melting, cream brown sugar and eggs, then add melted butter and margarine.
Combine flour, baking powder and salt and stir into sugar mixture. Fold in chocolate chips and nuts. Pour mixture into a greased 13 x 9-inch baking pan and bake for 45 to 50 minutes at 350 degrees F.

The cake was really easy to make. It was my first "from scratch" cake ever. The best thing about it was that it was raining when we baked. It could only have been better if a thunderstorm was happening at the time!
Tomatoes on a cake? I want to try that...

sounds good, kelly! i spent this weekend planting my vegetable garden. i have about 8 different varieties of tomatoes, plus 2 types of squash, 4 colors of bell peppers... i'll bring the tomatoes!
